A Hole in One -- Easy Mini Baked Donut Recipe & Sweet Gift Idea



Last week Rook No. 17 featured a tutorial for making play donuts out of children's socks.  Today brings a recipe for mini donuts that you can really sink your teeth in to!

My youngest daughter loves to bake and try new recipes, so when I saw the mini donut pan at Cost Plus last week, I knew it would be a perfect gift for her.  I must confess, it was kind of a gift for me (and the rest of the family as well).  After all, who doesn't love a donut?  I remember being in third grade and getting an "All About Me" book from the school book order, and filling in almost every blank with the word "donut".   So, my obsession with donuts goes way back.  


We used a nice little mix (also purchased from Cost Plus) the first time we tried the pan, and the little baked donuts that it yielded were absolutely delicious.  It didn't make many, however, and we were eager to make more to share with friends and family.  I searched the internet for a simple recipe, but could only find recipes that called for ingredients like powdered buttermilk, canned evaporated milk, or spices like nutmeg and allspice.  What I wanted was a recipe that could be made from simple ingredients commonly found in any home, and that yielded a nice, light, tasty cake (with no spice).  So, I set about experimenting.  Happily, it took only two batches to get the measurements right  -- just in time for my daughter and her friend to have a little lemonade and donut stand (The "Hole in One") this past Saturday!


This recipe is so easy -- so simple -- and so delicious!  The best part is that the donuts are baked, not fried, without compromising taste.  And, they bake up in only 5 minutes.  I adapted a chocolate glaze recipe from Alton Brown's "Chocolate Doughnut Glaze", and let the kids go wild with sprinkles.


Just think about what a fun holiday gift bundle you could put together with one of these mini donut pans (sold in many stores these days for $8-$15), some fun sprinkles, and a copy of the recipe.  You can also package all the dry ingredients together and include the directions to make your own packaged mini-donut MIX!

Mini Baked Donut Recipe
(makes 3 dozen mini donuts)

4 Tablespoons butter, melted
2 cups all-purpose flour
1 cup granulated sugar
2 teaspoons baking powder
1 teaspoon baking soda
1/4 teaspoon salt
2 Tablespoons cornstarch
1 1/2 cups whole milk
4 large eggs
1 teaspoon vanilla extract
Nonstick cooking spray

Preheat oven to 425

Step 1:  In a microwave or in a small pan on the stovetop, melt butter and set aside.

Step 2:  In a medium bowl, add flour, sugar, baking powder, baking soda, salt, and cornstarch.  Whisk to combine.

Step 3:  In the bowl of a standing mixer (or in a medium bowl, with a handheld mixer), mix milk and eggs until thoroughly combined.

Step 4:  Add dry ingredients to wet ingredients and stir on medium speed to combine.

Step 5:  Add melted butter and vanilla and stir on medium speed to combine.


Step 6:  Spray mini donut pan with nonstick cooking spray.  Fill each well 1/2 way with batter. To dispense the batter, I love to use a Wilton Easy Pour Funnel (you can pick these up in the cake decorating aisle of most craft stores for around $6).  It makes dispensing the batter so easy and precise!



Step 7:  Bake for 5 minutes.

Step 8:  Remove pan from oven.  Invert pan to release donuts.  Cool donuts on a wire rack.

Step 9:  Glaze and decorate.


Easy Chocolate Donut Glaze
(adapted from Alton Brown)
(glazes approx. 36 mini donuts)

1/4 cup butter
2 Tablespoons whole milk
1 Tablespoon honey
1 teaspoon vanilla extract
2 oz. chocolate chips
1 cup powdered sugar, sifted

Step 1:  In a small bowl, add butter, milk, vanilla and honey.  Microwave for 1 minute.
Step 2:  Add chocolate chips.  Whisk till chocolate is completely melted.
Step 3:  Stir in the sifted powdered sugar.
Step 4:  Microwave for an additional 20 seconds.
Step 5:  Dip the lighter colored side of each donut into the glaze, sprinkle with donuts, and set on a wire rack to set.

  21. I just got a new donut pan and was excited to try this recipe out tonight. Boy was I disappointed! I think the problem is too many eggs... it took over 15 minutes in the oven and then way too eggy, didn't cook up right at all. I made one panful, tried one right out of the oven and it was NOT tasty. My boyfriend, who will eat anything, took one bite and said "yuck!" and threw the rest away. I threw everything away and will never make this recipe again. Sorry but this was a huge miss.

    1. Wow, that IS terribly disappointing news. I'm so sorry. I wonder what could have gone wrong with the recipe. Your description definitely doesn't match up to the ones that we made for the stand. They were a big hit with adults and kids alike. They were light and definitely not too eggy. Hmmm...hard to diagnose. Were the eggs large, or did you perhaps use something larger like an XL or jumbo? That's the only thing I can think of that would lead to an eggier doughnut that would take 20 minutes to bake. I can't rule out the possibility that I made a mistake in transcribing my recipe. It's important to me that my recipes live up to their promises. I'm glad that you came to me, but I'm sad to hear that it was such a mess nonetheless. I'm going to whip up a batch of these this week and double-check that I didn't make a mistake with the recipe. Stay tuned...
