Holiday Side Dish ~ French Onion Cauliflower Gratin

Inspired by a box of goodies that I received from the nice folks at Loeb's Onion Crunch, I created an all-new holiday side-dish to bring to the family table -- French Onion Cauliflower Gratin.  

Delicious, 100% Natural and only 4 ingredients:  Onion, Palm Oil, Wheat Flour, Salt
Those delicious little crispy, crunchy fried onions are typically the star of the traditional green bean casserole at this time of year.  I took my inspiration from this classic dish, pairing the toasty onions with sweet and mellow cauliflower instead of green beans.  In the place of the canned soup, I whipped up a bechemel cream sauce, loaded with Gruyere cheese, in just minutes.  The finished casserole evokes the flavors of a fine French Onion Soup.


 French Onion Cauliflower Gratin

Yield:  8-10 servings
Prep Time:  20 minutes
Baking Time:  30 minutes 
  • 1 large head of cauliflower, rinsed and chopped
  • 2 Tablespoons butter
  • 3 Tablespoons all-purpose flour
  • 1 3/4 cups whole milk
  • 2 teaspoons kosher salt (or 1 teaspoon table salt)
  • 8 ounces grated Gruyere cheese
  • 1 cup Onion Crunch

Butter an 8x8 baking pan or casserole dish

1.  In a large stock pot, cover chopped cauliflower with cold water.  On the stovetop, bring to boil over high heat.  Once the water comes to a boil, continue to cook the cauliflower for 2 minutes.  Immediately drain, then rinse the cauliflower in cold water.  Set aside.

2.  In a 3-quart saute pan, melt butter. Whisk in the flour and cook until a light toasty brown.  Whisk in the milk and bring to a boil, whisking continuously.  Sauce will thicken as it comes to a boil.  Remove from heat and stir in the salt and all but 1/4 cup of the grated cheese.
3.  Stir the drained cauliflower into the cheese sauce.   

4.  Pour cauliflower and cheese sauce into the prepare baking dish.  Top with Onion Crunch and reserved 1/4 cup of cheese.

5.  Bake at 350 for 30 minutes, or until golden an bubbling.

  1. oh, man.....this sounds sooooooooo good! um...since it is highly unlikely that i'll find loeb's onion crunch on a small island in the puget sound... are these basically french fried onions....kinda like french's only better? i've been using trader joe's...if there's a difference maybe i can go to their website and find out if they're shipping clear over to the west...thanks for your inspiration!

  2. Hi auntiejenni, thanks for your questions about the Onion Crunch. Yep, you hit the nail on the head -- "Like French's, only better." French's adds soy flour and dextrose to their french fried onions. I haven't had the Trader Joe's ones though. I do love that store! You can definitely get the Onion Crunch online. Here's a link to their online store if you'd like to give them a try: A 12 oz. container is less than $3.

  5. Nice! One thing I did differently this year... I used to make "candied sweet potatoes." This year I just steamed and mashed them and added some butter, a little sea salt and some sucanat. It was so good.

  6. I love Onion Crunch - it is my absolute favorite. So much healthier than French's or Fresh Gourmet - and so many more applications and uses. Plus it is priced better than any Trader Joes or Whole Foods gourmet healthy crispy onions - and Onion Crunch is just as healthy if not more so and at a much better price point. I am a Onion Crunch Fan!

  7. Onion Crunch is such a clever way to add flavor and texture to your meal. I have two nephews who don't usually like to eat onions or other vegetables for that matter, but they love Onion Crunch, because of its crispy, crunchy texture. It has the texture of chips but the healthiness of vegetables. I would recommend this product to anyone who has children that don't like to try vegetables. This is definitely the start of something great!

  8. These are the only crispy crunchy onion topping I will use. All the others become moist and mushy by the time you go to eat. I am now using it with every meal, especially for breakfast on my eggs!
